Thanksgiving is more than food. It’s family. It’s football. It’s freedom. But who are we kidding — the food is the best part. Sure, many love their turkeys, but why not step it up this year by trying something new? This Thanksgiving, let’s go vegan.
And don’t worry. This is vegan made easy. Here’s 3 lazy vegan recipes to try out this Thanksgiving.

1. Lazy Vegan Recipes: Spinach with Smoked Tofu

Vegan food slaps when you put in a little effort. This recipe is a simple reminder of that. Smoked tofu is delicious, easy to make, and best of all, cheap!
Did you know? “Cheese is made when milk separates into curds and whey, and tofu is made when soy milk separates into curds and whey. So, tofu is the curd of soy milk – and as a result, it is sometimes called bean curd.”
Recipe as follows
Toss spinach, shiitakes, & onion. Top with smoked tofu. Toss with vinaigrette. Garnish with sunflower & sesame seeds.
Vinaigrette Recipe
- 1 tsp Dijon Mustard
- 2 cloves Garlic minced
- 1 tsp Chili Paste
- 1 tsp Ginger grated
- 4 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tbsp Soy Sauce
- 2 tbsp Orange Juice
Mix dijon, garlic, chile paste, ginger, soy sauce, balsamic vinegar & orange juice. Drizzle oil slowly and incorporate it into the mixture
2. Lazy Vegan Recipes: Tomato Cucumber Salad with Oregano and Mint (AKA Greek Salad)

Along with this incredible dish, we’ll share our zesty lemon vinaigrette recipe (that takes the flavor to a new level).
Obviously, we’re ditching the feta cheese that is usually used in a greek salad. But if you’re not vegan then feel free to add some cheese in.
Did you know? “An authentic Greek salad does not include lettuce. It is quite common for Greeks to eat seasonally. A Greek salad is primarily a summer dish, and since lettuce only grows in Greece during the winter months a traditional ‘Horiatiki’ salad does not include lettuce.”
Recipe as follows
- Organic Greens
- 1 pound Tomatoes sliced
- 1/2 Cucumber sliced on a bias
- 1/2 tsp chopped Oregano
- 1/2 tsp chopped Mint
- 12 Kalamata Olives
Spread greens on a serving platter. Alternate tomato & cucumber slices overlapping them slightly. Drizzle vinaigrette, crumble the cheese, oregano and mint over the top. Garnish with olives.
Lemon Vinaigrette Recipe
- 2 tbsp Lemon Juice
- 1 tbsp Orange Juice
- 2 tbsp Olive Oil
- 1 tsp fresh Oregano
- 1/2 tsp dried Oregano
Mix together.
3. Lazy Vegan Recipes: Surf & Turf Salad

We saved one of the quickest, easiest, and cheapest recipe for last.
Did you know? “Hijiki (ヒジキ, 鹿尾菜 or 羊栖菜, hijiki) is a brown sea vegetable growing wild on rocky coastlines around Japan, Korea, and China. Hijiki has been a part of the Japanese diet for centuries. It is rich in dietary fiber and essential minerals such as calcium, iron, and magnesium.”
Recipe as follows
- 1/2 cup Hijiki Seaweed
- 1 Avocado
- 1 tbsp Lemon juice (optional)
- 3 cups Red Cabbage
Soak seaweed for 20 minutes or until soft. Rinse and drain. Peel and dice the avocado. Shred cabbage.
Dressing Recipe
- 1/4 cup Rice Vinegar
- 3 tbsp Mirin sauce
- 1 tsp Sesame Oil
- 1 clove Garlic minced
- 1 tsp Ginger
- 2 Scallions
- 1 Jalapeno or Serrano Chili Pepper (seeded & minced)
- Salt & Pepper to taste
Combine all dressing ingredients and toss with salad ingredients.
